Perfect Running Weather

It’s soooo nice out this morning – perfect day to make it back out to the track!

It was crisp and cold – in the high 40’s – so I started in a jacket but quickly ditched it and just ran in a t-shirt with gloves. My favorite! Very fashionable. 😉

It was so fun to see my running buddies – it had been awhile! I forgot to wear my watch, but we did three 2000’s – 5 laps around the track – with a couple minutes break in between each. Plus a warm up and cool down jog!

Post-workout I made one of my usual favorite creations – a savory waffle + two fried eggs + wilted spinach + avocado. So good.

As for my appetizer when I first got home, I enjoyed some watermelon! Especially as the weather heats up, watermelon is a great way to rehydrate from workouts, and also contains potassium, vitamin B6, vitamin C, and antioxidants – all great for recovery/health! Grab some to enjoy after your next run or sweat sesh. 🙂 I’m excited to be continuing my partnership with The Watermelon Board again this year, so I’ll be sharing some more fun watermelon recipes throughout the year. Stay tuned! And if you don’t want to wait, check out my Roasted Salmon with Watermelon Salsa and Watermelon Rosemary Popsicles from last year. 🙂

The Watermelon Board also has some great recipes on their website – this Watermelon Poke Bowl reminds me of our fun trip to Hawaii last year, and their Watermelon Flag Kebobs would be really fun for the 4th of July!

Anyway – I hope it’s lovely where you are, too, and that you’re enjoying it with some outdoor time! 🙂 By the way – for my readers who are gearing up to train for summer/fall races, have you checked out my Nutrition for Runners program? You can get started for FREE here.

Have a great day!

Any other post-workout watermelon fans? It’s THE BEST after hot summer runs, bike rides, or hikes – so refreshing!
